Ingredients
- 8 ounces of slightly expired sausages
- 1 cup of dried lentils
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 can of diced tomatoes
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- Salt and pepper to taste

Instructions

In a large pot, heat some oil over medium heat.

Add the diced onion, carrots, celery, and garlic to the pot. Cook until softened, about 5 minutes.

Slice the slightly expired sausages into bite-sized pieces and add them to the pot. Cook for another 5 minutes.

Add the dried lentils, diced tomatoes, chicken or vegetable broth, dried thyme, and dried oregano to the pot. Stir well to combine.

Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes, or until the lentils are tender.

Season with salt and pepper to taste.
