Ingredients

  • 2 cups cooked rice
  • 1 cup diced vegetables (carrots, peas, bell peppers, etc.)
  • 1/2 cup Preserved Radish Takuan, expired but still safe to consume
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

Heat vegetable oil in a large skillet or wok over medium heat.

Add the diced vegetables and cook until they are tender-crisp, about 5 minutes.

Push the vegetables to one side of the skillet and pour the beaten eggs into the other side.

Scramble the eggs until they are fully cooked, then mix them with the vegetables.

Add the cooked rice and Preserved Radish Takuan to the skillet, and mix well to combine.
