Ingredients

  • 1 block firm tofu, cubed
  • 1/2 cup Preserved Radish Takuan, expired but still safe to consume
  • 2 cups mixed vegetables (broccoli, snow peas, carrots, etc.)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1/4 cup vegetable broth
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

Instructions

In a small bowl, whisk together the vegetable broth, soy sauce, sesame oil, and cornstarch. Set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add the tofu cubes and cook until they are golden brown on all sides, about 5 minutes. Remove from the skillet and set aside.

In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant.

Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.

Return the tofu to the skillet and add the Preserved Radish Takuan.

Pour the sauce mixture over the tofu and vegetables, and stir well to coat everything evenly.

Cook for an additional 2-3 minutes, stirring constantly, until the sauce has thickened.

Season with salt and pepper to taste.
