Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 4 cups vegetable broth
- 1 cup canned chickpeas, rinsed and drained
- 1 cup diced tomatoes
- 1 preserved lemon, flesh removed and rind finely chopped
- 1 cup cooked couscous
- Fresh cilantro, for garnish

In a large pot, heat the olive oil over medium heat.

Add the onion and garlic, and sauté until fragrant and softened.

Stir in the cumin, coriander, turmeric, and cinnamon, and cook for another minute.

Pour in the vegetable broth and bring to a boil.

Reduce heat and simmer for 15 minutes to allow the flavors to meld together.

Add the chickpeas, diced tomatoes, and preserved lemon rind.
