Ingredients

  • 2 lbs chicken, cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chicken broth
  • 1/4 cup Preserved Lemon Moroccan, rinsed and chopped
  • 1/4 cup green olives
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

In a large pot, heat the olive oil over medium heat. Add the chicken pieces and brown them on all sides.

Remove the chicken from the pot and set aside.

In the same pot, add the chopped onion and minced garlic. Cook until softened.

Add the cumin, ginger, paprika, and cinnamon to the pot. Stir well to coat the onions and garlic with the spices.

Return the chicken to the pot and pour in the chicken broth.

Cover the pot and simmer for 30 minutes, or until the chicken is cooked through.

Stir in the Preserved Lemon Moroccan and green olives. Cook for an additional 5 minutes to allow the flavors to blend.

Season with salt and pepper to taste.
