Ingredients
- 1 Opened Packaged Monterey Jack Cheese
- 4 large bell peppers
- 1 cup cooked quinoa
- 1/2 cup black beans
- 1/2 cup corn kernels
- 1/4 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste

Instructions

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes.

In a mixing bowl, combine the cooked quinoa, black beans, corn kernels, diced tomatoes, cilantro, cumin, chili powder, salt, and pepper.

Stuff each bell pepper with the quinoa mixture.

Place the stuffed bell peppers in a baking dish.

Sprinkle the shredded Monterey Jack cheese on top of each bell pepper.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and continue baking for another 15 minutes, or until the cheese is melted and bubbly.
