Ingredients

  • 1 pound fresh raw lobster
  • 1/2 cup lime juice
  • 1/4 cup orange juice
  • 1/4 cup red onion (finely chopped)
  • 1 jalapeno pepper (seeded and finely chopped)
  • 1/4 cup cilantro (chopped)
  • Salt and pepper to taste

Instructions

1. Bring a large pot of salted water to a boil.

2. Add the lobster to the boiling water and cook for 2 minutes.

3. Remove the lobster from the water and let it cool.

4. Once cooled, remove the lobster meat from the shell and chop it into bite-sized pieces.

5. In a bowl, combine the lime juice, orange juice, red onion, jalapeno pepper, cilantro, salt, and pepper.

6. Add the chopped lobster to the bowl and mix well.

7. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

8. Serve the lobster ceviche chilled with tortilla chips or as a topping for salads or tostadas.
