Ingredients

  • 4 bell peppers
  • 300 grams ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 200 grams slightly expired Japanese curry roux
  • Salt and pepper to taste

Instructions

Preheat the oven to 180°C (350°F).

Cut off the tops of the bell peppers and remove the seeds and membranes.

In a large skillet, heat the vegetable oil over medium heat.

Add the diced onion and minced garlic to the skillet and sauté until the onion becomes translucent.

Add the ground beef to the skillet and cook until browned.

Add the diced carrots and potatoes to the skillet and cook for 5 minutes.

Crumble the slightly expired Japanese curry roux into the skillet and stir until it melts and coats the ingredients.

Season with salt and pepper to taste.

Stuff each bell pepper with the curry roux mixture and place them in a baking dish.

Cover the baking dish with foil and bake in the preheated oven for 30 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the bell peppers are tender.
