Ingredients
- 2 cups cooked rice
- 1 cube Japanese curry roux
- 1/2 cup diced onion
- 1/2 cup diced carrot
- 1/2 cup peas
- 2 scrambled eggs
- 2 tbsp cooking oil
- 1 tbsp soy sauce
- 1/2 tsp black pepper
- 1/2 tsp salt

Instructions

Heat oil in a pan over medium heat.

Add diced onion and carrot, cook until softened.

Crumble curry roux cube into pan, stir until vegetables are coated.

Add peas and cooked rice, stir to combine.

Push rice to one side of pan, pour scrambled eggs in the other side. Cook until eggs are done, then mix into rice.
