Ingredients

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 3 tablespoons tahini
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves expired garlic, chopped
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • Water (as needed)

Instructions

Preheat the oven to 400°F (200°C).

Wrap the expired garlic cloves in aluminum foil and roast in the preheated oven for 20-25 minutes, or until soft and golden. Allow them to cool.

In a food processor, combine the roasted garlic, chickpeas, tahini, lemon juice, olive oil, cumin, and salt.

Process until smooth and creamy. If the mixture is too thick, add water, 1 tablespoon at a time, until desired consistency is reached.
