
Roasted Garlic Hummus
This creamy and flavorful hummus recipe makes great use of expired garlic while reducing food waste. The roasting process enhances the garlic's natural sweetness.
Ingredients
- 1 can (15 ounces) chickpeas, drained and rinsed
- 3 tablespoons tahini
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 cloves expired garlic, chopped
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- Water (as needed)
Instructions
Preheat the oven to 400°F (200°C).
Wrap the expired garlic cloves in aluminum foil and roast in the preheated oven for 20-25 minutes, or until soft and golden. Allow them to cool.
In a food processor, combine the roasted garlic, chickpeas, tahini, lemon juice, olive oil, cumin, and salt.
Process until smooth and creamy. If the mixture is too thick, add water, 1 tablespoon at a time, until desired consistency is reached.
Taste and adjust the seasoning if needed.
Transfer the roasted garlic hummus to a serving dish and drizzle with a little olive oil.
Serve with pita bread, crackers, or fresh vegetables.
