
Crispy Ramen Noodle Salad
A refreshing and crunchy salad made with slightly expired frozen ramen noodles.
Ingredients
- 2 packs of slightly expired frozen ramen noodles
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1/2 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup roasted peanuts
- 2 tablespoons sesame seeds
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
Instructions
Cook the slightly expired frozen ramen noodles according to package instructions, then drain and set aside.
In a large bowl, combine the shredded cabbage, shredded carrots, chopped green onions, chopped cilantro, roasted peanuts, and sesame seeds.
In a small bowl, whisk together the rice vinegar, soy sauce, honey, sesame oil, grated ginger, and minced garlic to make the dressing.
Pour the dressing over the vegetable mixture and toss to coat.
Add the cooked ramen noodles to the bowl and gently toss to combine.
Let the salad sit for 10 minutes to allow the flavors to meld together.
Serve the crispy ramen noodle salad as a refreshing side dish or as a light main course.
