Ingredients

  • 2 cups cooked duck meat, past its expiration date (4 days after expiry)
  • 4 cups mixed salad greens
  • 1 orange, peeled and segmented
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts, toasted
  • 2 tablespoons olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

In a small bowl, whisk together olive oil, orange juice, lemon juice, honey, salt, and pepper to make the dressing. Set aside.
