Ingredients
- 1 cup expired dried mixed fruit
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey
- 1/4 cup shredded coconut
- 1/4 cup chia seeds
- 1/4 cup chopped nuts (optional)
Instructions
- In a food processor, pulse the expired dried mixed fruit until finely chopped.
- In a large bowl, combine the chopped fruit, rolled oats, almond butter, honey, shredded coconut, chia seeds, and chopped nuts (if using). Mix well.
- Place the mixture in the refrigerator for 15-30 minutes to firm up.
- Once chilled, roll the mixture into bite-sized energy balls using your hands.
- Store the energy balls in an airtight container in the refrigerator for up to a week.
