- 8 slices rye bread
- 1/2 cup thousand island dressing
- 1 pound cooked corned beef (past its expiry date but still safe to consume)
- 1 cup sauerkraut, drained
- 8 slices Swiss cheese
- 4 tablespoons unsalted butter, softened

Preheat a large skillet or griddle over medium heat.

Spread each slice of rye bread with thousand island dressing.
