- 1 leftover calzone (homemade or takeout)
- 1/2 cup shredded cheese
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley

Instructions

Preheat a non-stick skillet over medium heat.

Slice the calzone into thin strips.

Place a tortilla in the skillet and sprinkle half of the shredded cheese on one half of the tortilla.

Top with sliced calzone, diced tomatoes, black olives, red onion, and parsley.

Fold the tortilla over to cover the filling.

Cook for 2-3 minutes, or until the bottom is golden brown.

Carefully flip the quesadilla and cook for another 2-3 minutes, or until the cheese is melted and the second side is golden brown.
