Apricot Nectar Glazed Chicken
A delicious chicken dish glazed with apricot nectar, reducing food waste while ensuring food safety.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup apricot nectar (unopened and slightly past expiration)
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
Instructions
In a bowl, whisk together apricot nectar, soy sauce, honey, minced garlic, grated ginger, salt, and black pepper.
Place the chicken breasts in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes or overnight.
Preheat the oven to 375°F (190°C).
Heat vegetable oil in an oven-safe skillet over medium-high heat.
Remove the chicken breasts from the marinade, allowing excess marinade to drip off, and place them in the hot skillet.
Cook the chicken for 4-5 minutes on each side, until golden brown.
Pour the remaining marinade into the skillet and transfer it to the preheated oven.
Bake for 15-20 minutes, or until the chicken is cooked through and the glaze has thickened.
Remove from the oven and let it rest for a few minutes before serving.
Serve the Apricot Nectar Glazed Chicken hot with steamed rice or roasted vegetables.
