
Classic French Omelette
A classic French omelette that uses fresh eggs past their expiration date. Proper cooking will ensure food safety.
Ingredients
- 4 fresh eggs (past their expiration date)
- Salt and pepper to taste
- 1 tablespoon butter
- Optional fillings: cheese, cooked vegetables, herbs
Instructions
In a bowl, whisk together the fresh eggs, salt, and pepper until well combined.
Heat a non-stick skillet over medium heat and melt the butter.
Pour the egg mixture into the skillet and let it cook undisturbed for a minute.
Using a spatula, gently push the cooked edges towards the center and tilt the skillet to allow the uncooked eggs to flow to the edges.
Continue cooking until the omelette is mostly set but still slightly runny on top.
Add your desired fillings to one half of the omelette.
Using a spatula, carefully fold the other half of the omelette over the fillings.
Cook for another minute to melt the cheese (if using) and ensure the omelette is fully cooked.
Remove from heat and serve immediately.
