Ingredients
- 2 cups unopened canned split peas (past expiration date but safe to consume)
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper, to taste

Instructions

In a large pot, heat some oil over medium heat.

Add the diced onion, carrots, celery, and minced garlic. Sauté until the vegetables are tender.

Add the unopened canned split peas (including the liquid) to the pot.

Pour in the vegetable broth, and add the bay leaf and dried thyme.

Season with salt and pepper to taste.

Bring the soup to a boil, then reduce the heat to low and simmer for about 30 minutes, or until the split peas are soft.

Remove the bay leaf.

Using an immersion blender or a regular blender, puree the soup until smooth.

If needed, return the soup to the pot and reheat before serving.
