Ingredients
- 2 cups unopened canned split peas (past expiration date but safe to consume)
- 3 tablespoons tahini
- 1 lemon, juiced
- 2 cloves garlic
- 1/2 teaspoon ground cumin
- 3 tablespoons olive oil
- Salt and pepper, to taste
- Optional toppings: olive oil, paprika, chopped parsley

In a food processor, combine the unopened canned split peas (including the liquid), tahini, lemon juice, garlic, cumin, olive oil, salt, and pepper.

Blend until smooth and creamy, scraping down the sides as needed.

Taste and adjust the seasonings if desired.

Transfer the split pea hummus to a serving bowl.

Drizzle with olive oil and sprinkle with paprika and chopped parsley, if desired.
