Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups broccoli florets
- 3 cups vegetable broth
- 1 cup milk
- 1 cup expired but still safe Edam cheese, grated
- Salt and pepper to taste

Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and garlic, and sauté until softened.

Add the broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the broccoli is tender.

Using an immersion blender or regular blender, puree the soup until smooth.

Return the soup to the pot and stir in the milk and grated Edam cheese. Heat over low heat until the cheese is melted and the soup is heated through.
