Ingredients

  • 2 chicken breasts, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 4 star anise pods, lightly crushed
  • 1/4 cup chicken broth
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon honey
  • 2 green onions, chopped

Instructions

In a bowl, combine the sliced chicken, soy sauce, and cornstarch. Let it marinate for 15 minutes.

Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic, ginger, and star anise pods. Cook for 1 minute until fragrant.

Add the marinated chicken and stir-fry for 5-6 minutes or until cooked through.

Add the sliced onion, bell pepper, and carrot. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

In a small bowl, whisk together chicken broth, oyster sauce, hoisin sauce, and honey. Pour the sauce over the stir-fry and toss to coat everything evenly.

Cook for 2-3 minutes until the sauce thickens slightly.

Garnish with chopped green onions and serve hot over steamed rice or noodles.
