
Salami and Potato Hash
This recipe transforms slightly expired salami into a flavorful and filling potato hash.
Ingredients
- 1 lb potatoes
- 6 oz slightly expired salami
- 1 onion
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
Peel and dice the potatoes into small cubes.
Finely chop the onion and mince the garlic.
Heat olive oil in a large skillet over medium heat.
Add the onion and garlic to the skillet and sauté until fragrant.
Add the diced potatoes to the skillet and cook until golden brown and crispy, stirring occasionally.
While the potatoes are cooking, thinly slice the salami.
Push the potatoes to one side of the skillet and add the sliced salami to the other side.
Cook the salami until slightly crispy, stirring occasionally.
Combine the salami with the potatoes and season with paprika, dried thyme, salt, and pepper.
Continue cooking for another 5 minutes to allow the flavors to meld together.
Serve the salami and potato hash hot and enjoy as a hearty breakfast or brunch option.
