
Salami and Potato Hash
This recipe transforms slightly expired salami into a flavorful and filling potato hash.

Ingredients
- 1 lb potatoes
- 6 oz slightly expired salami
- 1 onion
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
- Peel and dice the potatoes into small cubes.
- Finely chop the onion and mince the garlic.
- Heat olive oil in a large skillet over medium heat.
- Add the onion and garlic to the skillet and sauté until fragrant.
- Add the diced potatoes to the skillet and cook until golden brown and crispy, stirring occasionally.
- While the potatoes are cooking, thinly slice the salami.
- Push the potatoes to one side of the skillet and add the sliced salami to the other side.
- Cook the salami until slightly crispy, stirring occasionally.
- Combine the salami with the potatoes and season with paprika, dried thyme, salt, and pepper.
- Continue cooking for another 5 minutes to allow the flavors to meld together.
- Serve the salami and potato hash hot and enjoy as a hearty breakfast or brunch option.
