
Ranch Potato Skins
Transform your commercial bottled ranch dressing into delicious potato skins while reducing food waste. Use unrefrigerated unopened ranch dressing that is slightly past expiration but still safe to consume.
Ingredients
- 4 large potatoes
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup chopped green onions
Instructions
Preheat the oven to 400°F (200°C).
Wash and dry the potatoes. Pierce each potato several times with a fork.
Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the potatoes are tender.
Remove the potatoes from the oven and let them cool slightly.
Slice each potato in half lengthwise. Scoop out most of the flesh, leaving a thin layer of potato.
Brush the inside and outside of each potato skin with ranch dressing.
Place the potato skins on a baking sheet. Fill each skin with shredded cheddar cheese, crumbled bacon, and chopped green onions.
Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve the ranch potato skins hot as an appetizer or side dish.
