
Protein Pancake Muffins
Make delicious muffins using expired but safe Protein Pancake Mix. These muffins are a great way to reduce food waste and enjoy a nutritious breakfast or snack.
Ingredients
- 2 cups expired Protein Pancake Mix
- 1 ripe banana, mashed
- 1/4 cup honey
- 1/4 cup milk
- 1/4 cup melted butter
- 1/2 teaspoon vanilla extract
- 1/2 cup add-ins of your choice (e.g., chocolate chips, dried fruits, nuts)
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, combine the expired Protein Pancake Mix, mashed banana, honey, milk, melted butter, and vanilla extract. Mix well until all ingredients are fully incorporated.
Fold in your desired add-ins, such as chocolate chips, dried fruits, or nuts.
Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack to cool completely.
