Transform expired Protein Pancake Mix into energy balls that are perfect for a quick and nutritious snack. These energy balls are a great way to use up leftover mix and reduce food waste.
Ingredients
- 2 cups expired Protein Pancake Mix
- 1/2 cup almond butter
- 1/4 cup honey
- 1/4 cup mini chocolate chips
- 1/4 cup shredded coconut
Instructions
In a large mixing bowl, combine the expired Protein Pancake Mix, almond butter, honey, mini chocolate chips, and shredded coconut. Mix well until everything is evenly incorporated.
Using your hands, roll the mixture into bite-sized balls.
Place the energy balls on a baking sheet lined with parchment paper.
Refrigerate the energy balls for at least 30 minutes to firm up.
Once firm, transfer the energy balls to an airtight container and store them in the refrigerator for up to 1 week.
