
Microwaveable Mac and Cheese Frittata
A delicious and easy frittata recipe made with slightly expired microwaveable mac and cheese. The frittata is cooked in a skillet on the stovetop.
Ingredients
- 2 cups of slightly expired microwaveable mac and cheese
- 4 eggs
- 1/4 cup of milk
- 1/2 cup of shredded cheddar cheese
- Salt and pepper to taste
- 1 tablespoon of butter
Instructions
In a large bowl, whisk together the eggs and milk until well combined.
Add the slightly expired microwaveable mac and cheese to the egg mixture and stir to combine.
Season with salt and pepper to taste.
Heat the butter in a skillet over medium heat.
Pour the mac and cheese mixture into the skillet and spread it evenly.
Cook for 5-7 minutes, or until the edges are set and the bottom is golden brown.
Sprinkle the shredded cheddar cheese on top of the frittata.
Cover the skillet with a lid or aluminum foil and continue cooking for another 5 minutes, or until the cheese is melted and the center is set.
Remove from heat and let it cool slightly before slicing and serving.
