
Mac and Cheese Stuffed Peppers
Transform expired microwaveable mac and cheese into a flavorful filling for roasted bell peppers. The high oven temperature ensures proper cooking and eliminates any potential bacteria.
Ingredients
- 2 bell peppers
- 2 cups cooked microwaveable mac and cheese (expired but safe)
- 1/4 cup diced tomatoes
- 1/4 cup diced onions
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Cut the bell peppers in half lengthwise and remove the seeds and membranes.
In a bowl, combine the cooked mac and cheese with diced tomatoes and onions.
Season with salt and pepper to taste.
Fill each bell pepper half with the mac and cheese mixture.
Place the stuffed peppers on a baking sheet greased with olive oil.
Sprinkle shredded mozzarella cheese over each pepper.
Bake in the preheated oven for 20-25 minutes or until the peppers are tender and the cheese is melted and golden brown.
Allow the peppers to cool for a few minutes before serving.
