
Maraschino Cherry Scones
Delicious scones with a burst of maraschino cherry flavor. Perfect for using slightly expired but unopened maraschino cherries.
Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1/2 cup maraschino cherries, drained and chopped
Instructions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold butter to the dry ingredients and use a pastry cutter or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.
In a separate bowl, whisk together the buttermilk and vanilla extract.
Pour the buttermilk mixture into the bowl with the dry ingredients and stir until just combined.
Gently fold in the chopped maraschino cherries.
Transfer the dough onto a lightly floured surface and knead it a few times until it comes together.
Shape the dough into a circle, about 1-inch thick.
Using a sharp knife, cut the dough into 8 wedges.
Place the scones onto the prepared baking sheet and bake for 15-18 minutes, or until golden brown.
Remove from the oven and let the scones cool on a wire rack before serving.
