In a small saucepan, combine the maraschino cherries, balsamic vinegar, honey, Dijon mustard, and minced garlic. Cook over medium heat until the cherries break down and the sauce thickens slightly, about 10 minutes. Season with salt and pepper to taste.

Meanwhile, heat the olive oil in a large oven-safe skillet over medium-high heat. Season the pork chops with salt and pepper on both sides. Sear the pork chops in the skillet for 3-4 minutes per side, until golden brown.
