
Maraschino Cherry Cheesecake
A rich and creamy cheesecake with a unique maraschino cherry flavor. Perfect use for unopened Maraschino cherries that are slightly past expiration but still safe to eat.
Ingredients
- 2 cups graham cracker crumbs
- 1 stick unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup unopened Maraschino cherries, drained and chopped
- 1/2 cup Maraschino cherry syrup from the jar
Instructions
Preheat oven to 325 degrees F and lightly grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of the prepared pan.
In a large bowl, beat the cream cheese until smooth. Add the granulated sugar and vanilla extract; mix until well combined.
Add eggs, one at a time, beating well after each addition. Stir in the chopped Maraschino cherries and cherry syrup.
Pour cream cheese mixture over the crust in the pan. Bake for 1 hour, or until the center is set and the top is lightly browned.
Allow cheesecake to cool in the oven with the door cracked for 1 hour, then refrigerate for at least 4 hours before serving.
