Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup slightly melted expired ice cream
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, mix the slightly melted ice cream, milk, egg, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are lumps.
Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
Using a 1/4 cup measuring cup, pour the pancake batter onto the skillet, spacing them apart.
Cook for about 2-3 minutes, until bubbles form on the surface of the pancakes.
Flip the pancakes and cook for an additional 1-2 minutes, until golden brown.
