Ingredients

  • 4 strips expired bacon, chopped
  • 2 large potatoes, peeled and diced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 eggs
  • Fresh parsley, chopped (for garnish)

Instructions

In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon from the skillet and set aside.

In the same skillet, add the diced potatoes and cook until golden brown and cooked through. Add the onion, bell pepper, and garlic. Cook for an additional 5 minutes or until vegetables are tender.

Sprinkle paprika, salt, and pepper over the potato mixture. Stir to combine.

Make 4 wells in the potato mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes or until the eggs are cooked to your desired doneness.
