Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 potato, peeled and diced
- 4 cups vegetable broth
- 1 cup water
- 1 teaspoon Ashwagandha powder
- Salt and pepper to taste

Instructions

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and minced garlic, and sauté until translucent.

Add the diced carrots, celery, and potato to the pot, and cook for 5 minutes.

Pour in the vegetable broth and water, and bring to a boil.

Reduce heat to low and simmer for 20 minutes, or until the vegetables are tender.
