- 8 slices of bread
- 200g expired Appenzeller cheese block, thinly sliced
- 2 tablespoons butter, softened
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Salt and pepper to taste

Preheat a skillet or griddle over medium heat.

In a small bowl, combine the softened butter, mayonnaise, and Dijon mustard.

Spread the butter mixture on one side of each slice of bread.

Place the cheese slices on the unbuttered side of 4 bread slices. Season with salt and pepper.

Top with the remaining bread slices, buttered side facing out.

Grill the sandwiches in the preheated skillet until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
