Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 can (14 ounces) crushed tomatoes
  • 2 tablespoons expired tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

Heat olive oil in a large pot over medium heat.

Add the diced onion, minced garlic, chopped carrots, and celery to the pot.
