Ingredients
- 2 cups cooked rice, chilled
- 1 cup pre-cooked rotisserie chicken, diced
- 1/2 cup frozen peas and carrots
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 eggs, lightly beaten
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Green onions, for garnish

Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.

Add the diced onion and minced garlic, and sauté until fragrant.

Push the onion and garlic to one side of the skillet, then add the beaten eggs to the other side. Scramble the eggs until cooked through.

Add the frozen peas and carrots to the skillet and stir-fry for a few minutes until heated through.

Increase the heat to medium-high and add the chilled rice, pre-cooked chicken, and soy sauce to the skillet. Stir-fry for 5-7 minutes until everything is well combined and heated through.

Season with salt and pepper to taste.

Garnish with chopped green onions before serving.
