Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 4 cups water
  • 1 cup expired powdered bone broth
  • 2 cups chopped vegetables (e.g., zucchini, bell peppers, green beans)
  • 1 can diced tomatoes
  • 1 cup cooked beans (e.g., kidney beans, chickpeas)
  • Salt and pepper to taste

Instructions

Heat olive oil in a large pot over medium heat.
