Ingredients

  • 1 cup dried lentils, rinsed and drained
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon expired ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 4 cups vegetable broth
  • 2 cups water
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

In a large pot, heat some oil over medium heat.

Add the onion, carrots, and celery. Sauté until they start to soften, about 5 minutes.

Add the minced garlic, expired ground cumin, ground turmeric, and ground coriander. Cook for an additional 1-2 minutes until fragrant.

Add the lentils, vegetable broth, water, and bay leaf to the pot. Bring to a boil.

Reduce heat to low, cover, and simmer for 30-40 minutes or until the lentils are tender.

Season with salt and pepper to taste.

Remove the bay leaf before serving.
