Ingredients
- 2 pounds gravy beef, commercially bottled or canned, unopened
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, cut into chunks
- 2 parsnips, cut into chunks
- 2 potatoes, cut into chunks
- 2 cups beef broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste

Preheat the oven to 325°F (160°C).

In a large oven-safe pot, heat the olive oil over medium heat.

Add the onion and garlic, and cook until softened.

Add the gravy beef and brown on all sides.

Add the carrots, parsnips, and potatoes to the pot.

Pour in the beef broth and add the bay leaf and dried thyme.
