Ingredients
- 2 cups slightly expired Fufu West African Cassava Dough
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tomatoes, chopped
- 1 carrot, sliced
- 1 bell pepper, diced
- 1 cup spinach leaves
- Salt and pepper to taste
- Chopped fresh cilantro for garnish

Instructions

In a large pot, heat some oil over medium heat.

Add the diced onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.

Add the chopped tomatoes, sliced carrot, and diced bell pepper. Cook for a few minutes until the vegetables soften.

Pour in the chicken broth and bring to a boil.

Reduce the heat to low and add the slightly expired Fufu West African Cassava Dough. Stir well to break up the dough and let it dissolve in the broth.

Simmer for about 20 minutes, stirring occasionally.

Add the spinach leaves and season with salt and pepper. Cook for an additional 5 minutes until the spinach wilts.
