Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, thinly sliced
  • 2 cups expired frozen mixed vegetables
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the onion and garlic, and stir-fry for 2 minutes until fragrant.

Add the bell pepper and frozen mixed vegetables, and cook for 5-7 minutes until the vegetables are heated through.

In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, water, salt, and pepper.

Pour the sauce over the vegetables and stir-fry for an additional 2-3 minutes until the sauce thickens.

Serve the vegetable stir-fry over cooked rice.
