Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, diced
- 4 cups expired frozen mixed vegetables
- 4 cups vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, for garnish

Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and garlic, and sauté for 2-3 minutes until fragrant.

Add the carrots, celery, frozen mixed vegetables, vegetable broth, bay leaf, dried thyme, salt, and pepper.

Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes until the vegetables are tender.

Remove the bay leaf and discard.

Serve the vegetable soup hot, garnished with fresh parsley.
