
Spinach and Feta Stuffed Chicken Breast

Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup slightly expired spinach, chopped
- 1/4 cup crumbled feta cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a bowl, mix the slightly expired spinach, crumbled feta cheese, olive oil, salt, and pepper.
Cut a pocket into each chicken breast by slicing horizontally through the side.
Stuff each chicken breast with the spinach and feta mixture, dividing it equally.
Secure the openings with toothpicks if needed.
Heat a skillet over medium-high heat and sear the stuffed chicken breasts for 2-3 minutes on each side.
Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes or until cooked through.
Ensure the chicken reaches an internal temperature of 165°F (74°C) for food safety.
Let the chicken rest for a few minutes before serving.
