
Blackberry Oatmeal Bars
Delicious oatmeal bars made with expired blackberries, providing a safe way to use leftover fruit in a baked recipe.
Ingredients
- 2 cups expired blackberries
- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 cup brown sugar
- 1/4 cup melted coconut oil
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
1. Preheat your oven to 350°F (175°C) and grease a baking dish.
2. In a mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, melted coconut oil, cinnamon, and salt. Mix well until crumbly.
3. Press half of the oat mixture into the bottom of the greased baking dish to form a crust.
4. Spread the expired blackberries evenly over the oat crust.
5. Sprinkle the remaining oat mixture over the blackberries as a crumble topping.
6. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the blackberries are bubbling.
7. Remove from the oven and let it cool completely before cutting into bars.
