Ingredients

  • 1 cup expired dried shiitake mushrooms, rehydrated and sliced
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • Cooked rice or noodles (for serving)

Instructions

In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, salt, and pepper. Set aside.

Heat the vegetable oil in a wok or large skillet over high heat.

Add the minced garlic and sliced onion to the pan and stir-fry for 1-2 minutes until fragrant.

Add the rehydrated and sliced shiitake mushrooms to the pan and stir-fry for another 2 minutes.

Add the bell pepper, carrot, and broccoli to the pan. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

Pour the sauce mixture over the vegetables and stir well to coat everything evenly. Cook for an additional 1-2 minutes.

Remove from heat and serve the shiitake mushroom stir-fry over cooked rice or noodles.
