
Spiced Couscous Pilaf
A fragrant and flavorful pilaf made with slightly expired couscous mix
Ingredients
- 1 cup couscous mix
- 1 1/2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- 1/4 cup raisins
- 1/4 cup chopped almonds
- Salt and pepper to taste
Instructions
In a medium saucepan, heat the olive oil over medium heat.
Add the diced onion and minced garlic, and sauté until they become translucent.
Add the ground cumin, ground coriander, turmeric, and cinnamon to the pan. Stir well to coat the onions and garlic with the spices.
Add the couscous mix to the pan and stir to combine with the spices and vegetables.
Pour in the vegetable broth and bring to a boil.
Reduce the heat to low, cover the pan, and simmer for 10-12 minutes, or until the couscous is tender and has absorbed all the liquid.
Remove the pan from the heat and let it sit, covered, for 5 minutes.
Fluff the couscous with a fork, then stir in the raisins and chopped almonds.
Season with salt and pepper to taste.
Serve the spiced couscous pilaf as a side dish or as a main dish with grilled vegetables or roasted chicken.
