- 1 cup expired couscous mix
- 1 ½ cups boiling water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 tomato, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to taste

In a large bowl, pour the boiling water over the expired couscous mix. Cover the bowl with a lid or plastic wrap and let it sit for 10 minutes.
