Ingredients
- 1 can of slightly expired beans
- 1/2 cup all-purpose flour
- 1/4 cup finely chopped onions
- 1/4 cup chopped bell peppers
- 1/4 cup chopped fresh cilantro
- 1 tsp baking powder
- 1/2 tsp cumin powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- Vegetable oil for frying

Drain and rinse the canned beans.

In a mixing bowl, mash the beans using a fork or potato masher.

Add the flour, onions, bell peppers, cilantro, baking powder, cumin powder, paprika, salt, and black pepper to the mashed beans. Mix well to form a thick batter.

Heat vegetable oil in a frying pan over medium heat.

Drop spoonfuls of the batter into the hot oil and flatten them slightly.

Fry the fritters for 2-3 minutes on each side until crispy and golden brown.
