Ingredients

  • 1 cup expired banana baby food
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup milk (or plant-based milk)
  • 1 tablespoon melted butter (or oil)
  • 1 tablespoon honey (optional)
  • 1 egg

Instructions

In a large bowl, whisk together the expired banana baby food, flour, baking powder, baking soda, salt, and cinnamon.

In another bowl, whisk together the milk, melted butter (or oil), honey (if using), and egg.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.

Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

Pour 1/4 cup of batter onto the skillet for each pancake.

Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
